Smashing Pumpkins PUMPKIN GIN SOUR Serves 2 • 4 ounces Seersucker Southern Style Gin • 1½ ounces lemon juice • 1½ tablespoons pumpkin butter • 2 egg whites • Ice • 2 dashes cinnamon • 2 sprigs fresh thyme Combine gin, lemon juice, pumpkin butter and egg whites in cocktail shaker. Shake well, add ice and shake again. Strain into coupe glasses. Dash with cinnamon and garnish with thyme. A scratch liqueur ensures true ﬂ avors. So, imagine my complete surprise upon coming across a pumpkin cocktail that thrills me. The Harvest Mule manager Kalli Smith ensures that the drink hits all is a creation from Abilene’s Abi-Haus restaurant. Bar the right notes: ginger beer’s spice and fi zz, lemony PUMPKIN OLD-FASHIONED Serves 2 • 4 ounces pumpkin liqueur (see below) • 10 ounces sparkling water • 6 dashes bitters • Orange wheels for garnish To make liqueur Combine 2 cups water with ¼ cup maple syrup in a saucepan and bring just to a boil. Reduce heat to low, add 4 cinnamon sticks, 1 tablespoon whole allspice, 1 teaspoon vanilla extract, 3 teaspoons roughly chopped fresh ginger and 1 / 3 cup canned pumpkin puree. Simmer for 15 minutes; remove from heat and cool completely. Strain through fi ne mesh sieve lined with cheesecloth, using the back of a wooden spoon to force all the liquid through. Combine with 1½ cups bourbon or rye in a glass jar with a tight-fi tting lid. Chill for at least two days and up to three months. To serve, fi ll two highball glasses with ice. Divide liqueur and sparkling water between the two glasses. Top with 3 dashes bitters per glass, stir and garnish with orange wheels. tartness, vodka for spirit and just a hint of earthiness agreeable. And with that, the hunt was on for other with liqueurs that taste like jacked-up pumpkin from pumpkin puree. It’s not sugary; in fact, it’s most desirable pumpkin libations. There are plenty mixed pie, but pure fl avors aren’t easily found. A notable exception is the Pumpkin Gin Sour, originated by San Antonio-based Seersucker Gin’s master distiller, Trey Azar, and served at Fixture Kitchen and Social Lounge on Magnolia Avenue in Fort Worth. And sipping something made with bourbon or rye, I because my personal salute to turning leaves includes determined to make an old-fashioned spiked with a homemade pumpkin liqueur. These three are truly great pumpkin cocktails.
