It is a chance to try out recipes. Whatever the reason, this time-honored tradition is known as the “family meal.” Typically the pre-service dinner is something filling and easy to make. At Clay Pigeon and Piattello Italian Kitchen in Fort Worth, both owned by chef Marcus Paslay, it happens every Saturday. We joined the staff at Piattello recently where the chefs made two kinds of pork for tacos along with all the fixings plus ceviche and beans. Another staffer brought rice from home. Chefs Bria Downey and Jen Williams did most of the prep work with Downey chopping up two kinds of tender pork for the tacos. There are no formalities; everyone helps themselves and settles into the corner of the restaurant with full plates. They talk in low tones; some manage to return for seconds. But cleanup is swift as the clock winds down toward dinner service. Leftovers and dirty plates disappear. Managers gather staff around as tables are wiped down and candles are lit. Someone says quietly: Those tacos were so good, but now I really need a nap.
